At the 2026 Great Taste Awards, three of our four noodles were recognised by the judges: our Hand-Folded Noodles received 2 Stars, while our Knife-Cut and Fine Noodles each received 1 Star. Across the range, the judges particularly recognised qualities including chew, body, resilience, wheat flavour and texture.

The balance of water in the dough influences how it develops and, ultimately, how the finished noodle cooks and feels when you take that first bite.
It’s one of those details you may never think about while eating a bowl of noodles. But get the balance right and you experience it in the texture: firmness, elasticity and that satisfying chew that makes you want another mouthful.

Our attention to detail continues long after the dough is prepared.
Using traditional Taiwanese sun-drying methods, the noodles are naturally dried rather than rushed through high-temperature industrial drying.
Time is part of the process.
This slower, gentler approach helps preserve the natural character of the wheat while creating the firm, resilient texture we want from a ChopChop noodle.
