Ingredients
- 1 Pack of your preferred noodles
- 1 tbsp Vegetable Oil
- 75g Smoked Lardons
- 2 Stems of Scallion (Spring Onion)
- 1 tbsp Light Soy Sauce
- 1 tbsp Black Rice Vinegar
Instructions
- Cook the Noodles: Add noodles to approx. 800ml of boiling water. Cook per packet instructions, then drain thoroughly.
- Prep the Scallions: Chop the 2 stems of scallion into 4-5cm lengths.
- Crisp the Lardon: Heat vegetable oil in a pan over medium heat. Add smoked lardons and cook until the edges are slightly crispy and the fat has rendered.
- Char the Scallions: Add the chopped scallions to the pan. Cook slowly in the lardon oil, stirring often, until they are deep golden with charred edges.
- Combine: Add the cooked noodles, light soy sauce, and black rice vinegar into the pan.
- Finish: Toss everything together over low heat until the sauce clings to the noodles.
- Serve: Plate immediately with your favourite protein.
