Ingredients
- 1 Pack of your preferred noodles
- 3 tbsp Sesame Paste
- 1 tbsp Shallot Oil (see note below)
- 2 tbsp Light Soy Sauce
- 1 tbsp Dark Soy Sauce
- 2 tbsp Noodle Water (if necessary)
- Chopped Spring Onion and Roasted Sesame Seeds (for garnish)
Instructions
- Cook the Noodles: Add noodles to approximately 800ml of boiling water. Cook according to packet instructions.
- Prepare the Base: While the noodles cook, whisk the sesame paste, shallot oil, and soy sauces together in a large bowl.
- Emulsify the Sauce: If the sauce is too thick, add 2 tbsp of the noodle cooking water and whisk until smooth.
- Drain: Drain the noodles thoroughly once they are finished cooking.
- Combine: Toss the noodles and sauce together immediately until every strand is well coated.
- Garnish: Top with spring onions and roasted sesame seeds.
- Serve: Serve with your favourite protein.
Chef's Notes:
Shallot oil you can buy this pre-made, but it's simple to make at home. Finely dice 1 small red shallot and pan-fry with 250ml of vegetable oil for about 5 minutes until golden brown.
